Often associated with the Osaka and Hiroshima regions of Japan, okonomiyaki is a savory pancake that includes a variety of ingredients. Osaka-style okonomiyaki is the most common form found in Japan featuring meat, flour, yam, eggs, vegetables, seafood and sometimes cheese whipped together and served pancake style. Hiroshima style okonomiyaki, on the other hand, usually is made with the ingredients layered on top of eachother. Both styles decorate the dish with Worcestershire sauce, seaweed flakes, Japanese mayonnaise, and/or pickled ginger.
